IQF foods are notable for the fact that each individual piece of food is frozen separately from all the others. So that for example, a box of IQF cod fillets doesn't simply contain a solid block of fish, but rather, each of the individual fillets is loose inside the box. Obviously, this makes IQF foods much easier to work with.
The way seafood is frozen in the IQF method involves sending the individual fish on a sort of conveyor belt into a blast-freezer that freezes the item very quickly. Because of this very rapid freezing, flavour and textures are maintained.
